Appetizer Course
∙ Sesame-crusted BC Albacore tuna satays on a crisp watercress and frissee salad with Ponzu

Main Course

∙ Stuffed Prosciutto-wrapped roasted Frasier Valley quail with a rosemary-sage jus, wild BC mushroom risotto and glazed baby carrots

Dessert Course

∙ Dark chocolate lava cakes with a sweet cranberry couilis and natural vanilla bean ice cream


4 Course

∙ Puree of cauliflower soup with grated nutmeg and seared Qualicum Bay scallops

2 Course

∙ Carpaccio of Alberta-raised “free-run” bison, shaved Pana Gradano, Balsamic reduction, extra virgin olive oil and seasonal greens

3 Course

∙ Roasted wild boar tenderloin stuffed with a dried apricot and apple bread pudding, cranberry compote, Fall root vegetable mash and sautéed Chantrelles

4 Course
∙ Vanilla bean and orange Grand Marnier crème brulee with bitter chocolate biscotti

Salad Station (Choose 2)
∙ Salad of shaved fennel, red onion and orange with extra virgin olive oil
∙ Pickled beet, local home-made chevre and cracked black pepper
∙ Roma tomato, Buffalo Mozzarella, basil and Balsamic reduction with sea salt
∙ Panzanella salad with crunchy bread, balsamic, cherry tomatoes, red onion and caper vinaigrette

Soup Station (Choose 1)
∙ New potato and baby leek
∙ Chef’s seasonal vegetable
∙ Dungeness crab bisque

Pasta Station (Choose 1)
∙ BC Spot Prawn and sweet pea penne
∙ Braised beef short rib raviolis in red wine and green peppercorn cream reduction
∙ Hand-made spinach linguine and fresh Manilla Clams

Carving Station (Choose 1)

∙ Bison banquet rib roast with red wine jus
∙ Loin of wild boar with rosemary and cranberry pan gravy
∙ Spicy lamb shank with cold cucumber “Raita”
∙ Roasted free-range Frasier Valley ½ chicken and wild BC mushroom cream sauce

∙ Poached 6oz wild Coho fillet with warm lemon-caper olive oil
∙ Pan-seared Saki-marinated Sablefish with sweet chilli glaze
